My parents recently vacated our household to attend a family friends wedding in South Africa. In their three week absence my sister and I shared the household chores, including the cooking. My sister being vegan therefore made my dinner duty a little harder than anticipated. I cook plenty of vegetarian and often vegan meals and desserts but I have never previously had to do a weekly shop, plan and cook every meal catering to a vegan. I usually just cook one or two vegan dinners a week out of happy accident and we normally have a vegan or vegetarian ready meal or two in the freezer. To make my life easier I posited that I would go vegan for a week, she laughed briefly but was very excited by the idea. I then immediately changed my mind at the thought of not having eggs and porridge in the morning and decided to go vegetarian for a week instead.
So off I set to Waitrose prowling the aisles for all sorts of vegetarian deliciousness. Knowing just what a busy person I am (eye roll), I always look for some healthy ready(ish) meals. Something I can whip up in a few minutes or more often cook in a few minutes in the evening then pack for my lunch the following day at work. I am well acquainted with Quorn products, Linda Macarthy products and a few others but I was yet to stumble upon Good Life. I grabbed some French Bean & Spinach Sausages, Mushroom & Spinach Kievs and some falafel (of course). They have many other vegetarian ready meals but those sounded most appealing to me.
The sausages I ate for breakfast, you know, to remind me of those good old days when I actually ate proper sausages. They were great with some spinach and poached duck eggs.
The Kiev, rather less glamorously, I packed into some Tupperware for lunch.
The falafel I used to make a glorious salad with lettuce, corn, mushrooms, carrots, sugar snap peas, cucumber, seeds and hummus. It was divine!
So three meals in one week ready in no time at all. They made my life so much easier, if I am ever short on time again (say tomorrow) I will just pull one out the freezer. Definitely going to try the falafel in a wrap soon, with some sun dried tomatoes and olives, oh yeah.
