Beetroot juice has always been my favourite fresh fruit juice not just for its sporting applications, but it’s vibrant colour and sweet flavour. I hope you like my recipe!
- 2 raw beetroots
- 1 large handful of raspberries
- 1 large handful of strawberries
- 1 red apple
- 1 tbsp. of Yuzu juice or ½ lemon juice
- Peel the beetroots, chop the top off the strawberries and take the stalk off the apple, then juice everything and enjoy.
- Serve over ice to make it more refreshing.
When juicing fresh fruit and veg a lot of pulp gets wasted and thrown into the juicers bin. Most people throw this out. This is needless waste! The pulp is not just full of flavour but fibre, vitamins and minerals. It is perfectly good to eat, you just need to be creative enough to know how to use it. People starve in this world, don’t mock them by wasting food. My favourite way of upcycling this fruit and veg pulp is in porridge. Simply add plain oats and milk and you have a beautiful bowl of fruity oats. See mine below. You can also make a vegetable stock with it. Get creative, but please don’t throw it away.
