Sometimes you just don’t have the time in the morning to make yourself a delicious breakfast. That doesn’t mean you can’t make it the night before. Just like overnight oats, these delicious Oat and Blueberry Breakfast Muffins can be baked the evening before and enjoyed the following morning, either cold or warmed up. Two of these little treats makes for a well rounded breakfast, with approximately 30g of carbs, 10g of protein and 4g of fat per muffin.

Blueberry Breakfast Muffins
- 150g of oats
- 2 bananas
- 2 eggs
- 1 heaped tbsp. of blueberry (or vanilla) protein powder
- 1 handful of blueberries
- 1 tsp. of baking powder
- 1 tsp. of coconut sugar
- 1 tsp. of cinnamon
- Mash the bananas well in a large mixing bowl.
- Whip in the eggs.
- Whip in the protein powder and then the oats.
- Finally add the baking powder, coconut sugar and cinnamon, stir through the blueberries and pour into greased muffin cases, then bake on 180 degrees C for 20 minutes.

I used Multipower Blueberry Yoghurt whey protein but you can use any protein flavour you like; vanilla, cookies & cream, chocolate etc. You don’t even have to use blueberries, if you fancy something a little more indulgent you can use chocolate chips or cranberries etc. But these delicious Oat & Blueberry Breakfast Muffins are a great place to start, try these ones then get creative with your flavours.
