Plum and Blueberry Crumble

Ingredients
  • 8-10 large plums
  • 100g of blueberries
  • A small handful of raisins (optional)
  • 150ml of water
  • 2 tbsp. of maple syrup
  • 150g of oats
  • 5 tbsp. of maple syrup
  • 2½ tbsp. of melted coconut oil
  • 1 tbsp. of desiccated coconut
  • 1 tbsp. of smooth peanut butter
  • 1 tsp. of cinnamon
Instructions
  1. Pre-heat the oven to 200 degrees C.
  2. Remove the stones from your plums, cut into slices and lay flat in your crumble tray.
  3. Sprinkle the blueberries over the top of your plums.
  4. Sprinkle the raisins (if using) over the top of your blueberries.
  5. Pour in the 150ml of water.
  6. Drizzle over the 2 tbsp. of maple syrup.
  7. Melt your coconut oil in the microwave on a low heat.
  8. Place the bowl of melted coconut oil on a scale and zero the scale.
  9. Add 150g of plain oats.
  10. Now add the; cinnamon, desiccated coconut, maple syrup and peanut butter. Give it a good stir.
  11. Layer this mixture evenly over the fruit and place in the oven at 200 degrees C for 20 minutes.
  12. Leave to cool for a few minutes and tuck in.
