Healthy Blueberry Banana Bread

Ingredients
  • 2 eggs
  • 3 bananas
  • ½ cup honey
  • ¼ cup milk of choice
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • ⅓ cup melted coconut oil
  • 1 ¾ cups buckwheat or spelt flour
  • 1 large handful of blueberries
Instructions
  1. Preheat oven to 180 degrees Celsius.
  2. Grease a baking loaf pan.
  3. Melt the coconut oil and then put everything into a food processor and blitz until smooth.
  4. Pour the batter into your greased loaf pan.
  5. Bake for 50-60 minutes, or until a toothpick inserted into the centre comes out clean.
  6. Let the bread cool in the pan, then transfer it to a wire rack to cool before slicing.
