Before I start how amazing does this look! When Beckie, the talent behind Embrace The Cake turned up on my doorstep with this cake in hand I honestly didn’t know what to say. I hadn’t seen such a beautiful cake since my last trip to Maison Blanc. She truly is the Raymond Blanc of the healthy foodies community!
From the wonderful range of cakes on offer at Embrace The Cake, I chose the “berry ripple cake”. A cashew based zebra cheesecake, that was honestly so creamy and smooth that I seemed to temporarily forget my age and any sense of table manners. Not only did I stick possibly the largest mouthful of food I have ever seen on a fork and proceed to stuff my face with it, but came very close to licking the plate clean (I managed to restrained myself). I had 2 rather large slices of cake the day that it arrived and another 2 every subsequent day until it was all gone. A very proud couple of days for me. It’s a bloody good thing all their cakes are refined sugar free, dairy free and gluten free. All the ingredients are also organic and where possible locally sourced. See the ingredients list below for their wonderful berry ripple cake.
- Soaked cashews
- Freeze dried black currant
- Vanilla extract
- Coconut oil
- Coconut milk
- Coconut nectar
I honestly cannot say enough nice things about this cake or company, but to ensure that I am not being bias (I haven’t eaten a regular sugary cake in over 3 years after all) I had my parents and sister try the cake and give me their immediate impressions.
Mum: “That is amazing, it’s so smooth”, “It’s so pretty”
Dad: “Really good” (a typically very talkative father, great help dad)
Sister: “Pretty good” (which is truth be told the greatest compliment I have heard her give in quite a while, embrace the cake, I would take that and run! This child is notorious for hating every meal my mother puts in front of her).
That may sound like a mixed review from my household but trust me that is their equivalent of saying holy s**t that cake was good!
My opinion: Holy shit that cake was good!
If you have a birthday (mines on the 27th of October 😉 thanks in advance Beckie) or any other celebration coming up that may require a cake then check out Embrace The Cakes website and follow them on Instagram for some serious food envy!
