When I was a kid my favourite cake was a lemon drizzle cake. I have recently been trying to bake a healthy version, but making a decent drizzle requires sugar, there is no way around it. So to get my sweet lemon fix I decided my efforts were better focused on breakfast. This Lemon and Poppy Seed Overnight Oat recipe is fresh, lemony and yet surprisingly sweet. It requires very few ingredients and is super simple, it takes about 3 minutes to whip together and will be waiting for you in the morning. Feel free to add 1 tbsp. of chia seeds or 1 tbsp. of desiccated coconut, both make great additions to this recipe.
Lemon and Poppy Seed Overnight Oats
- 1 cup of oats
- 1 cup of milk
- 1 serving of Multipower Lemon casein protein powder
- 1 tbsp. of poppy seeds
- 1 tsp. of honey
- Mix everything together in a large bowl and pour into a cup.
- Leave overnight and enjoy in the morning.
I don’t know if you’ll agree with this statement but, Lemon and Poppy Seed Overnight Oats may just be better than a lemon drizzle cake. On a hot summers day this simple breakfast will cool you down and satisfy your taste buds. If you really like an intense lemon flavour you can cut some very small lemon chunks and stir them through your oats, for an extra zingy kick.
