Energy balls made of dates and nuts are something that I make all the time to take to training. They are a great snack before a tough session or match as they give you a little injection of natural sugar to boost energy levels. That said, I only realised last week that I haven’t actually posted a recipe for them yet. Problem solved! These Pecan & Cacao Energy Balls with chia seeds and a hint of cinnamon & nutmeg are perfect little wintery spiced treats! They are; raw, vegan, paleo, dairy and gluten freeeeeeeeeee. Tuck in! Pecan & Cacao Energy Balls Recipe
- 180g of pecans
- 12 dates
- 2 tsp. of cacao
- 2 tsp. of chia seeds
- 1 tsp. of cinnamon
- ½ tsp. of ground nutmeg
- Weight out ingredients.
- Add to food processor and blitz for 15-20 seconds or until mixture starts to come together.
- Take a handful of the mixture and roll it into balls using your palms.
- Place your energy balls on a plate or tray and leave in the fridge for 1 hour to set.
- Then store in an airtight container in the fridge until ready to enjoy.
Make sure you store your balls in an airtight container and leave them in the fridge. If you do they should last at least a week. You can also make these in batches and freeze them. In which case they will last a long time!
I have rolled mine into quite large balls but you can roll them about half this size and make more if you have a big group to feed. In which case this recipe should make 24 balls.
