Training today? You are going to need a snack. Don’t worry, these Raw Vegan Apricot Energy Balls will do the trick. Easy to make and they contain everything you need before a tough workout or match, protein from the nuts and natural sugar from the Manuka honey, apricots and dates to give you a little energy boost.
I love these energy balls, they are firm and keep their shape really well so you can put them in Tupperware and take them with you wherever you go. But they are also really moist and zesty, give them a go and let me know what you think.
Raw Vegan Apricot Energy Balls
- 150g of blanched almonds
- 1 cup of dried apricots
- 5 medjool dates
- Zest of ½ a lemon
- 1 tbsp. of desiccated coconut
- 1tbsp. of manuka honey
- 1 tsp. of baobab (optional)
- Put everything in a blender and blitz until it starts to come together and nuts are in small pieces.
- Remove and roll into small balls.
- Place in the fridge for 1 hour, then enjoy.
